Panakam

Ingredients:

1) 1 cup of powdered jaggery.
2) 3 cups of warm water.
3) 2 lemons.
4) About 2 tsp dried and powdered ginger.
5) 2 crushed cardamoms.
6) ½ tsp crushed pepper.
7) ½ tsp fine salt.

Also needed:

A bowl.
A glass.
A clean rectangular piece of cloth.

Steps for preparation:

1) Mix jaggery and water in the bowl you have.
2) Stir the mixture well until the jaggery dissolves and you get a brown solution.
3) Carefully tie the cloth over the mouth of the glass.
4) Pour the mixture into the glass through the cloth to filter the ingredients.
5) Take off the cloth and add in lemon juice, dried ginger powder, cardamom, pepper and salt directly to the solution.
6) Stir the ingredients with a spoon to mix them well.
7) Serve warm or chill it for sometime in the freezer to enjoy as a cool drink.



Pista Lassi

Ingredients:

1) 2 cups of chilled fresh curd.
2) 1tablespoon sugar.
3) ½ tsp cardamom powder.
4) 2-3 pistas.
5) 2 drops of pista essence.
6) ½ cup crushed ice.
7) 1 tsp hot milk.

Steps for preparation:

1) Ground pista to a fine powder.
2) Pour sugar into curd and stir to dissolve.
3) Mix all the ingredients together.
4) Blend the ingredients well in an electric blender.
5) Keep the lassi in refrigerator for sometime. Serve chilled.



Honey Banana Shake

Ingredients:

1) 1 cup fresh yoghurt.
2) 1 ripe banana, sliced.
3) 1 tbsp granulated sugar.
4) 1 tbsp honey

Steps for preparation:

1) Mix yoghurt, banana, sugar and honey and pour into an electric blender.
2) Blend the ingredients well until smooth.
3) Pour the mixture into 2 glasses.
4) Keep the lassi-filled glasses in the refrigerator. Take these out after sometime, stir the contents with a clean spoon and serve chilled.



Badam Sharbet (Almond drink)

Ingredients:

1) 500ml milk.
2) 2 tbsp double cream.
3) 140g almonds, finely grounded.
4) 60g icing sugar.
5) 2 tbsp rose water (gulab jal).
6) 4 ice cubes.

Steps for preparation:

1) Pour milk, cream, ground almonds, icing sugar and rosewater into an electric blender.
2) Blend the ingredients for about a minute, or until they are smooth and thoroughly mixed.
3) Pour the contents over into two glasses.
4) Pour 2 ice cubes into each glass and serve cold.



Mango Mint Lassi

Ingredients:

1) A large mango, peeled, diced and with stone removed.
2) 3 tbsp soft brown sugar.
3) 2 tbsp fresh mint, chopped.
4) 1 tsp star anise, freshly grounded.
5) 1 tsp cardamom, freshly grounded.
6) 1 tbsp lime juice.
7) 400g yoghurt.
8) 3 sprigs fresh mint (for garnish).
9) A few ice cubes.

Steps for preparation:

1) Pour mango, brown sugar, chopped mint, star anise, cardamom, lime juice and yoghurt into an electric blender.
2) Blend the ingredients at a high speed for a minute or two, or until they are smooth and thoroughly mixed.
3) Pour the contents over into two or more glasses.
4) Pour 2 ice cubes into each glass.
5) Garnish with fresh mint sprigs and serve.
